Mushroom Gravy and Millet with  Root Vegetables

Gluten free nut freeMillet might not be the first thing that comes to mind when you are thinking of something for dinner but believe me once you try you will see why it is worth having on hand. It is very versatile and easy to prepare, similar to rice. On its own the flavor is mild and somewhat nutty that's why it works well in so many dishes. Nutrition wise, it is a commonly overlooked powerhouse. It is a good source of protein, high in fiber and B vitamins, it has iron, magnesium, and zinc just to name a few. It is also gluten free and very easily digestible.This recipe is an adaptation from Angela's over at Oh She Glows. She has so many delicious creations there, very worth checking her out.

The main star of this meal though is the gravy, also gluten free and one of the most amazing savory gravies I have ever eaten...and I am a gravy junkie so I have tried many.
