Mushroom Gravy and Millet with Root Vegetables

Gluten free nut freeMillet might not be the first thing that comes to mind when you are thinking of something for dinner but believe me once you try you will see why it is worth having on hand. It is very versatile and easy to prepare, similar to rice. On its own the flavor is mild and somewhat nutty that's why it works well in so many dishes. Nutrition wise, it is a commonly overlooked powerhouse. It is a good source of protein, high in fiber and B vitamins, it has iron, magnesium, and zinc just to name a few. It is also gluten free and very easily digestible.This recipe is an adaptation from Angela's over at Oh She Glows. She has so many delicious creations there, very worth checking her out.

The main star of this meal though is the gravy, also gluten free and one of the most amazing savory gravies I have ever eaten...and I am a gravy junkie so I have tried many.

 

Savoury Pumpkin Sage Patties

If you have lots of pumpkins on hand and are looking for something exciting to do with them, give this recipe a try. This recipes is delicious and I am sure, from my experience, that a few of them might not make the short trip from the pan to the plate :)

Falafel Burgers

Who needs readymade veggie burgers when you can make your own. We all have days when we need a quick meal. So by using this recipe you can prepare yourself for those days. This recipe makes lots of burgers for freezing so you can just grab one from the freezer when you are in a pinch and have something homemade and delicious in no time.

With my small son Darwin on the eating solid food scene I am also interested in making things for him as close to the same as we are eating. So when I am preparing this recipe and making some mini burgers for him I add only about 1 clove of garlic to the whole mixture and no salt. Leaving the remaining garlic on the side. Then once all the ingredients are mixed in and it is time to form the patties I scope out a handful or so and put it on the side for his burgers. Then I add in the remaining garlic and some salt to the main batch. This way Darwin gets exposed to many of the same tastes that we eat. I found out the hard way that he isn't ready for as much garlic as we eat so I am starting slow. He really loves these burgers and they are very nutrient dense so I know he is getting nothing but the best.

Veggie Paella

This is my veggie interpretation of Paella. I have never eaten the original so I cannot compare. Yet, this dish is amazing in its own right and certainly ready to feed a hungry family.

Roasted Beet Quinoa with Caramelised Onions and Bordeaux Reduction

These root veggies sure don't hold back on the flavour. When combined with the caramelised onions and the Bordeaux reduction you have an inexpensive dish that tastes as if it were from a 5 star restaurant.
