Let's Eat!

Some people stop eating meat and/or all animal products all in one go. This approach is great more animals are saved that much quicker. Yet, if you don’t think you can give up the bacon, cheese and chicken all in one day don’t think that it isn’t worth doing. Just be honest with yourself and you can’t go wrong. Every little step in the direction of a plant-based lifestyle is one worth making. Even if you are only looking for a veggie meal for Meatless Mondays, we welcome you into our veggie world with open arms. We hope that your foray into the world of veggies will win you over.

Try not to worry too much about all of the nutrients each food contains. Don’t get hung up on where will you get protein and calcium. You will find that there are copious sources of all nutrients in the plant world…with a few minor exceptions that all have an easy work around. If you eat a varied diet then you will be fine, unless your idea of varied is a sugary cereal with soymilk for breakfast, peanut butter and jelly on white for lunch and pizza for dinner. The key is to eat whole, unprocessed food, REAL food, veggies, fruits, whole grains, beans, seeds and nuts. You will see that once you get started there are so many more meal options that you didn’t even know possible.

The initial transition may be a bit bumpy, so don’t beat yourself up if you burn the rice on the bottom or the cake doesn’t rise. I have been at it for sometime and I still run into these little hiccups from time to time.

We are so lucky to live in the time of the Internet it is such an amazing resource, offering a wealth of information. Take advantage of it, read, read, read. There is a lot of information about how a plant-based diet has a lower impact on the earth and all of the creatures that inhabit it. I don’t know the specific figures off the top of my head, yet those who eat a plant-based diet use fewer resources such as oil and water. As well, a significant amount of the world’s antibiotics are used in non-organic livestock, a practice that is leading to antibiotic resistance. In the US more then half of all the corn, soy and oats are used as animal feed. The benefits of a plant-based diet for the Mother Earth are numerous.

We all have our own path to follow and choices to make, so it is only my hope that you will seek out information and make informed choices. Live the life that best suits you yet, be aware that all of the choices we make not only impact ourselves but other creatures big and small, as well as the Mother Earth.

I gave up all meat when I was about 19. It was a gradual process that started with beef, followed by pork, chicken and all that lives in the sea. Recently I found out more information about the dairy industry and fell off that bandwagon too. I have always had a deep love towards all kinds of animals big and small and I just didn’t want to eat them any more. It didn’t feel right to keep these animals in conditions I would never wish on my worst enemy and then kill them to eat for my pleasure. At that time, the vegetarian choices were limited but my family was supportive and helped make it work at dinnertime, for this I am grateful. For the past 10 (or so) years I have been cooking up lots of veggie delights.

Over time my reasons for sticking with a plant-based diet have expanded beyond just compassion for animals. For me it is also about the environmental impact and the fact that all the food given to grow animals for human consumption can be more efficiently distributed to those in need. Additionally, all Beings carry an energy with them that is infinite and gets passed on. So when an animal is kept in inhumane conditions, suffering just so its flesh can be given to another the energy that builds up in this creature during its sad life is passed on to the person who eats that flesh. I don’t want to be a part of this circle that propagates negative energy. In hopes that if we vibrate more positive energy we can bring more peace to this Earth. Everyone has their own convictions for going veg and if mine don’t get you thinking about diving off the deep end into the veggie pool I hope the amazing, flavorful and satisfying food will. There are some strict vegans who look down on those who are not 100% vegan 100% of the time. I do understand their point of view but I would rather focus on the fact that every time you make a choice for a plant-based meal is a moment to be celebrated.
